La cocina de deliciosos platos de pescados más livianos y de elaboración más sencilla, privilegian las texturas y sabores de los ingredientes originales. Veamos esta fácil preparación de la brótola:
Ingredientes:
- 5 filetes grandes de brótola
- 100 gramos de margarina
- 2 cucharadas de aceite de oliva
- 4 cucharadas de jugo de limón
- 1 cucharada de perejil picado
- sal, pimienta, harina
Pasamos suavemente los filetes de la brótola por un poco de harina y luego sacudimos en forma lenta a efectos de retirar el exceso. En un sartén colocamos el aceite y cuando esté bien caliente freímos los filetes de la brótola, aproximadamente cinco minutos de cada lado hasta que se doren.
A medida que los cocinamos los vamos ubicando en una fuente. Desechamos el aceite sobrante y secamos el sartén con papel absorbente de cocina. Volvemos a calentarlo y añadimos la margarina, revolviendo de manera constante hasta que se derrita totalmente. Cuando comienza a dorarse retiramos del fuego, le agregamos el jugo de limón, perejil, sal y pimienta a gusto.
Vertimos la combinación sobre los filetes de pescado y servimos acompañando con rodajas finas de limón. Este clásico y sencillo plato puede ser ideal para degustar junto con papas hervidas o puré.
